Shrimp Cocktail                               


100 grams raw shrimp (approximately 10 - 12 medium shrimp steamed)
Cocktail Sauce
3 Ounces Tomato Paste
2 Tablespoons Lemon Juice
1 Tablespoon Apple Cider Vinegar
1 Teaspoon Hot Sauce                                                                               
18 Teaspoon of Horse Radish or to Taste                                    
Dash of Mustard Powder
Stevia to Taste
Sea Salt and Pepper to Taste
Water as needed for desired consistency


Directions:
Mix tomato paste, vinegar, horse radish, lemon juice and spices together and
allow spices to marinate and dipping sauce to chill.  Add additional water as
needed to create desired consistency.  Steam the shrimp until pink and well
cooked. Chill shrimp for 30 minutes in the refrigerator and serve with
cocktail dipping sauce.

Lemon Zest                       

13 lb. Asparagus
1 Tablespoon fresh lemon juice
Sea Salt
Ground Pepper

Rinse asparagus and break off any tough, white bottoms.  Cut into 1 - 2 inch sections, slicing the asparagus at a slight diagonal.  Fill medium sized pan half way with water and bring to a boil.  Add the asparagus and reduce heat slightly to a simmer.  Parboil the asparagus for exactly 2 minutes and drain the hot water.  While asparagus is still hot, toss them in bowl with lemon juice, salt, and pepper to taste.  Serve warm or room temperature.

Cucumber Salad                                             

200g thinly sliced cucumber (or allowed amount)
1 Tablespoon Vinegar (to taste) 

1 Teaspoon Dill
1/‌2 Teaspoon Stevia (as needed)

Black Pepper

Directions:
Combine all ingredients except cucumber & mix well.
Toss in cucumbers then cover and refrigerate. This tastes best if you wait at least one hour before serving.

Orange Slushy                           

¾  Crushed Ice
1 Orange
5 drops Valencia Orange Flavored Stevia

Directions:

Mix in blender until smooth.  Pour directly into glass and serve.

Orange Strawberry Smoothie                                 

 ¾ Cup Crushed  Ice           

½  Orange

½ Cup Fresh Strawberries                 

5 Drops of Vanilla Crème Stevia
5 Drops of Valencia Orange Stevia

Directions:

Mix in blender until smooth.  Pour into glass and serve or freeze to make shaved ice.

Bun-less Burgers                              

Grill Chicken, Turkey, or Beef Patties and season to taste.
Layer between 2 lettuce leafs and add grilled sweet onions and tomatoes.

Citrus fish                                                    


100 Grams White Fish
1 Tablespoon Minced Onion
2 Tablespoons Lemon Juice
Lemon and Orange Zest to Taste
Lemon and Orange Slices
Chopped Parsley
Sea Salt and Pepper to Taste                                                                           
Stevia to Taste


Directions:
Mix lemon juice with zest and a little stevia.  Baste fish with mixture and top
with sea salt, pepper, lemon, and orange slices.  Wrap in aluminum foil and
place on the barbeque or in the oven at 350 degrees.  Cook fish for 5 - 10 min
or until fish is thoroughly cooked.  Serve with lemon and top with parsley.

Strawberry Vinaigrette (Enjoy with Arugula Salad) 


Strawberries
1 Tablespoon Apple Cider Vinegar
1 Tablespoon Lemon Juice
Stevia to Taste
Dash of Sea Salt
Dash of Cayenne (optional)                                             
Fresh Ground Black Pepper to Taste
Stevia to Taste


Directions:
Combine all ingredients in food processor and puree until smooth.  Pour over
fresh arugula or green salad.  Garnish with sliced strawberries and freshly
ground black pepper.  Variations: use as a marinade or sauce for chicken.

Spicy Crab Salad                                     


100 Grams Crab
Celery diced (optional)
1 Tablespoon Lemon Juice
2 Teaspoons Apple Cider Vinegar
1 Tablespoon Bragg's Liquid Aminos
1 Tablespoon Finely Minced Red Onion
Dash of Garlic Powder
Dash of Onion Powder
Cayenne Pepper to Taste
Sea Salt and Black Pepper to Taste
You may substitute 1 Teaspoon of Old Bay seasoning for the powdered
ingredients.


Directions:
Steam the crab and chop into medium chunks.  Toss with onions, spices, and
liquid ingredients.  Marinate for 15 minutes or more and serve over mixed
green salad or add diced celery.

Chicken and Cabbage Soup                                             


100 Grams Chicken
Cabbage
2 Cups Chicken Broth (or substitute 1 cup water for 1 cup broth)
2 Tablespoons Bragg's Amino Acids (optional)
2 Cloves Garlic Crushed and Minced
1 Tablespoon Chopped Onion
¼ Teaspoon Thyme
¼ Teaspoon Rosemary
Cayenne Pepper to Taste
Sea Salt and Pepper to Taste


Directions:
Combine chicken and spices in medium saucepan.  Bring broth to a boil and
add the cabbage.  Reduce heat and simmer for a minimum of 30 minutes.  Add
additional water to broth as needed.  Variations: change the spices and add
fresh tarragon or turmeric.  Add a ¼ lemon with rind to the broth and
simmer for a rich lemon flavor.

Strawberry Sorbet                   

6 Strawberries                    
Juice of 1 Lemon
Stevia to Taste
Water (If Needed)

Directions:

Freeze fresh strawberries about 1 hour.  Blend fresh frozen strawberries, lemon juice, and Stevia in a blender until very well blended.  You can serve immediately or place in freezer to allow it to firm up even further.

 

TIP: If you don't want to wait, you can always use your fresh strawberries with out freezing them and simply add ice & any water needed.

Warm Cinnamon Apple                                                                    

1 Apple

Cinnamon to Taste
Stevia to Taste

 

Directions:

Cut one apple in half and sprinkle enough cinnamon on the apple to completely cover the exposed tops (or to your taste).  Place them on a plate and put them in the microwave for 2 - 3 minutes (or until a little soft).  Then, enjoy!  What a treat!  Perfect for any one who likes Apple Pie!  Yum!

Chilled Cabbage (Recipe Submitted by Jim Hicks)

1 Head of Cabbage

Apple Cider Vinegar to Taste

Stevia to Taste

Celery Seed to Taste

Sea Salt and Black Pepper to Taste

Water (Enough to Balance out the Vinegar)

 

Directions:  Coarsely chop head of cabbage and add in seasonings, vinegar, and water to taste.  Refrigerate as needed.
